Lemon Lavender Protein Bars (No bake)
This recipe was inspired by the Pistachio Protein Bars recipe by Olivia Wyles. I always give credit where credit is due and her original recipe is fabulous.
I have tried Olivia's recipe a few different ways.
I have used dark chocolate, sea salt and lavender for the topping.
I opted for a milk chocolate and peanut butter version. (I used Equip Prime Protein.) I tried more chocolate chips. (Do not recommend, doesn't cut well.)
All of this is to say that I have tried different nut butters, protein powders and even coconut oils.
Below is what I landed on for a lemon version.
I typically keep Choc Zero products on hand. For this recipe I used Choc Zero's Lemon Curd and white chocolate chips. If you would prefer to make your own lemon curd I really like Carolyn Ketchum's version.
Things I changed:
I switched out cottage cheese for greek yogurt. It just mixed smoother for me than the cottage cheese. My bars are a little more tender than the original due to the lemon curd, but still hold together nicely. I will say that the nut butter is non-negotiable for a solid bar. For a fruitier lemon bar you can leave it out, but I prefer the texture with.
Ingredients:
½ cup lemon meringue protein powder (Keto Chow)
¼ cup granulated sweetener allulose or monk fruit blend
1 cup almond flour
⅓ cup cashew butter (warmed)
⅓ cup greek yogurt
2 tablespoons coconut oil
2 tablespoons lemon curd
½ teaspoon vanilla extract
Topping:
½ cup sugar-free white chocolate chips
1 teaspoon coconut oil
dried lavender blossoms
coarse sea salt (optional)
Directions (bar):
Line a loaf pan with parchment paper.
Mix dry ingredients together.
I like to combine wet ingredients first, then combine with dry ingredients.
Press combined ingredients into loaf pan as evenly as possible.
Directions (topping):
Melt white chocolate chips and coconut oil in 30 second increments in the microwave, stirring every 30 seconds until liquified.
Spread evenly on top of bars.
Sprinkle lavender and sea salt on top.
Depending on how hot you made the topping it may need to cool a bit before adding the sea salt.
Place in refrigerator for a minimum of 1 hour.
Once cooled this recipe can be cut into 8 pieces.
