I experimented with different sweeteners. They turn out drier with <a href="https://amzn.to/2GThMV3">Lakanto Maple Syrup</a>. They are more moist when using a pump of <a href="https://amzn.to/3diCABl">Sugar Free DaVinci Vanilla Coffee Syrup</a>.</span></p><p><span style="font-family: georgia;">As pictured here these Pumpkin English Muffins are topped with Maple Cream Cheese a dash of cinnamon, and <a href="https://amzn.to/33SzwbK">Low Karb Keto Nut Granola</a>. I like to eat mine with a fork and add some maple syrup to the top. If you prefer less sweet; these can easily be toasted and eaten as is, while you are headed out the door on a busy morning.</span></p><p><span style="font-family: georgia;">I also found it easier to lightly oil my container and place the batter in both sides and microwave open face. When microwaving with the container closed some of the batter tried to climb out the sides. I wanted to use xanthan gum to try and get a chewier mouthfeel. I haven't decided if it is actually necessary. Mornings are for healthified hot chocolate. I have been drinking these lately and I love them. It is a nice antioxidant energy boost without the jittery caffeine buzz. (I have the caffeine sensitive gene.) If you can't live without your morning coffee, you could make a half coffee bean, half cocoa bean brew for a really delicious mocha.<br />

I make mine in a <a href="https://amzn.to/2trTLOq" target="_blank">Ninja coffee maker</a> on the rich brew setting. You could also make this in a french press and let brew longer for a deeper chocolate flavor.<br />
<br />
<b>Ingredients:</b><br />
1 Tbsp. <a href="https://amzn.to/368kZXl" target="_blank">Crio Bru grounds</a><br />
1 oz. heavy cream (I have also successfully tried this with unsweetened cashew milk)<br />
1 Tbsp. grated <a href="https://amzn.to/36ey9lM" target="_blank">cacao butter</a><br />
Sugar free sweetener to taste (I used <a href="https://amzn.to/2G5za4T" target="_blank">Chocolate Cardamom Stevia</a>)<br />

<b>How I latte:</b><br />
Heat cream and cacao butter for 30 seconds in microwave.<br />
Add sweetener.<br />
Froth for 30 seconds.<br />
Add grounds to coffee maker.<br />
Brew on top of froth.<br />

I top mine off with a little cinnamon.<br />

This recipe is my attempt to ketofy and de-ham that sandwich. In order to do that you need a bread like substance. I decided to go with a chaffle.<br />

Chaffles are all over the keto internet. Some say they are too eggy, other's cant get enough. Some versions are a fathead dough stuffed into waffle maker. Some are a minute muffin recipe stuffed into a waffle maker. Below you will find the version that I whipped up after trying various other versions.<br />

<b>Directions:</b><br />
Heat up your waffle maker/s. (I use <a href="https://amzn.to/2sGlSZK" target="_blank">dash minis</a> for portion control and perfect sized breakfast sandwiches)<br />
Mix together your almond flour and baking powder.<br />
Whisk in the egg whites and mayo. (Also your glazed donut flavoring and sweetener if you are using.)<br />
Pour half the mixture into one mini waffle maker.<br />
Pour the rest into your next waffle slot.<br />
Let cook 3-4 minutes depending on how brown you like your waffles.<br />

Once chaffles are completely cooked remove and place on plate.</div>

Add turkey to one waffle maker to heat up.</div>

You could also add the gouda cheese at this time if you want it melty, but it does get a bit messy if you close the waffle maker on the gouda.</div>

While your turkey is cooking, spread the raspberry jam on the chaffle.</div>
<div>
Once sandwich innards are done cooking place onto chaffle with jam. </div>
<div>
Top with other chaffle and dust sandwich lightly with Swerve confectioner's sweetener.</div>

<i><b>Pro Chaffler Tip:</b></i><br />
For a crispier chaffle add a touch of cheddar cheese to your waffle maker/s before adding batter and this will crisp up nicely while they are cooking.<br />

Today's blog is what I had for lunch. Below is my how-to since I used an air fryer instead of a traditional oven. The link to the original recipe is in the caption.<br />

I decided to test this recipe out in the Ninja Foodi I received for Christmas. (If you want your own there is link for the same one I have below.)<br />
I am finding that things do not take as long to cook in the Ninja Foodi.<br />
I baked the Califlour Pizza <a href="https://amzn.to/2seB6EW" target="_blank">crust</a> for 10 minutes on the Air Bake setting at 400 degrees. As you can see my edges are blackened so I may reduce the temperature next time to 375 degrees.<br />
Then I let it rest.<br />
The original recipe calls for honey, I substituted sugar-free <a href="https://amzn.to/35KUkzN" target="_blank">honey</a> instead.<br />
After assembling the pizza, I broiled it for 3 minutes on high.<br />
I have to say this recipe was too good as I ate the whole thing. Guess who is having a smaller supper?<br />

1 egg<br />
10 drops <a href="https://amzn.to/2Xexpxv" target="_blank">OOO Flavors Corn Bread</a> (optional)<br />

<b><u>Directions:</u></b><br />
1. Preheat air fryer to 380 degrees.<br />
2. Melt quesadilla cheese and cream cheese for 1 minute in a microwavable bowl. Stir. If not completely melted microwave for an additional 30 seconds until it can be mixed smoothly. Add in flavor drops.<br />
3. Add in almond flour, baking powder and 1 beaten egg.<br />
4. Divide dough into 4 to 8 rounds. (Depends on how thick you want them. Wet hands with water to keep dough from sticking.)<br />
5. Place on parchment paper in air fryer. Spray with avocado oil. Cook for 5 minutes, then flip and cook for another 5 minutes.<br />

Top with your preference and carb count. I found some Moe's Shredded Fajita chicken at Wal-Mart and used that. I also added some white queso dip, hot sauce and avocado.<br />

When I was little my grandmother made Cranberry Muffins with Sweetened Condensed Milk topping for Christmas. I have been wanting to recreate this treat for some time. Today was the day.<br />

Ingredients:</h3>
2 tbsp. almond flour<br />2 tbsp. coconut flour<br />1.5 tbsp. <a href="https://amzn.to/2MVCJgZ" target="_blank">Swerve</a> Confectioners<br />
1/2 tsp. baking powder<br />
1 tbsp. butter flavored <a href="https://amzn.to/2HSUC0K" target="_blank">coconut oil</a> (melted)<br />1/4 tsp. almond extract<br />
1 egg<br />2 tbsp. water<br />2 tbsp. dried cranberries<br />
1 tbsp. Vanilla SF <a href="https://amzn.to/2HPQoHa" target="_blank">Davinci</a><br />

Directions:</h3>
Place dried cranberries and vanilla syrup together in a small container to reconstitute berries.<br /><br />
In a separate (microwaveable) mug mix together your flours, swerve and baking powder.<br />Add egg, almond extract, water and coconut oil.<br />
Mix together.<br />
Fold in your cranberries.<br />

Place mug in microwave and cook for 1 min. If still moist continue to cook in 30 second increments.<br />

I purchased the sweetened condensed milk topping from Ketoluxe. I simply warmed up about two tablespoons and poured over the top of my muffin.<br />

There are a lot of noodle recipes out there. Some have worked...some have disintegrated in water. While I think zoodles are the healthiest option, sometimes I just don't want zoodles. (Zoodles are made by cutting zucchini into noodle shapes.) That's when I make these. This recipe was inspired by the cream cheese pancake <a href="https://www.ibreatheimhungry.com/cream-cheese-pancakes/" target="_blank">recipe</a> of I Breathe I Am Hungry fame. Mine is the simplest noodle recipe, just three ingredients. (Probably because I am the laziest and I don't like messing with making homemade noodles that are complicated when I also have to make something to put on top of them.) These are easy to throw together when I am boiling regular noodles for the regular noodle eating people I feed.<br />
<br />
I have played around a bit with the amount of fiber in this recipe.<br />
You can safely use up to 1.5 tablespoons of <a href="https://amzn.to/2NEbHZX" target="_blank">psyllium husk powder</a>.<br />
If that is too fibery for you, you can safely go down to 2 teaspoons of fiber.<br />
<br />
The more fiber, the firmer the end dough. You can easily use this as a wrap for a sandwich with the higher fiber amount. The noodles become more delicate with the lesser fiber amount. You can cut this to shape. I've used this in mexican keto lasagna by cutting it in half and using a square casserole dish.<br />
<br />
If you cook the noodles too long they will have a bready texture, but you will still be able to put sauce on top of them and twirl them with a fork.<br />
<br />
These keep fairly well in the fridge for a few days. I haven't ever tried to freeze them, because I ate them all.<br />

I have tried this pie numerous different ways. If you like a darker chocolate flavor add a tablespoon of cacao powder. Omit if you don't.<br />
<br />
I have tried almond flour, hazelnut flour and macadamia nut flour for the crusts. To me the hazelnut was the most bitter.<br />
<br />
I have tried peanut butter, almond butter and <a href="https://amzn.to/2pJITpp" target="_blank">hazelnut butter.</a> All of them work.<br />
<br />
(I still want to try Carb Killa's <a href="https://amzn.to/2RBAam4" target="_blank">White Chocolate Cookie</a>. For the white chocolate cookie I want to use sugar free marshmallow flavored <a href="https://amzn.to/2pIcQpT" target="_blank">coffee syrup </a>for a Smore's version of this pie.)<br />

Cream cheese is interchangeable with mascarpone. It is all really about flavor preference.<br />

So I loaded up my 3/4 cup serving, added my 1/2 cup of unsweetened cashew milk, (I don't like my cereal drowning.) added some stevia and dove in. The stevia helps a little. The cereal takes on a slick mouth feel once wet. I might try some sugar free maple syrup next time...or some sugar free vanilla coffee syrup. OOOOOooooo or maybe <a href="https://amzn.to/2NpgGTc" target="_blank">smore's</a> flavor.</div>

On its own, without sweetener and just cashew milk, it's bitter. Which I guess makes sense when you think of it as dark chocolate. On its own, straight out of the bag, it doesn't have a ton of flavor. It kind of reminds me of really crunchy protein powder.</div>

I added egg wash to the crust to seal the edges when I crimped them together and also coated the empanadas with egg wash to make them pretty.<br />

Pour a small amount of white sauce into the bottom of a loaf pan.</div>

Layer in half the chicken.</div>

Spread half the cheese mixture on top of that. Pour a little more sauce on top.</div>

Place your egg noodles in single layer on top of that. Tear them apart so they don’t overlap too much.</div>

Country Gravy:<br />
1 lb. pork sausage<br />
1 Tbsp. arrowroot flour<br />
1 1/2 cups heavy cream<br />
1/2 cup cashew milk unsweetened<br />
1/2 tsp. white pepper<br />
1/4 tsp. salt<br />
<br />
Brown pork sausage in a large frying pan.<br />
Sprinkle arrowroot flour on top and mix in.<br />
Add cream and cashew milk.<br />
Add salt and pepper.<br />
Bring gravy to a boil for a few minutes over medium high heat.<br />
Reduce heat and allow to reduce for 10-15 minutes, stirring frequently. Serve over biscuits.<br />

1 tsp. baking powder<br />
1 tsp. vanilla<br />
1 cup unsweetened peanut butter<br />
1/2 cup granulated sucralose or erythritol<br />
1/4 cup Ideal Brown <a href="https://amzn.to/2CRrC73" target="_blank">(or use Sukrin Gold)</a><br />
1/4 tsp. cinnamon<br />
1/4 cup sugar free chocolate chips<br />

Directions:<br />
Heat the oven to 350.<br />
Spray a pan with non-stick spray.<br />
Mix everything but the chocolate chips together.<br />
Split the batter in half.<br />
For the first half use a tablespoon and roll your cookies into dough balls and place on cookie sheet.<br />

For the second half mix your chocolate chips into the remaining batter. Roll into dough balls on and place on cookie sheet.<br />
Using a fork press each cookie down.<br />
Bake for 10 mins. Cool and eat. They are pretty tasty dipped in unsweetened cashew milk.<br />

Alfredo Sauce<br />
Ingredients:<br />
1 Tbsp Butter (Unsalted)<br />
1 oz. Mozzarella<br />
1 oz. Shredded Parmesan<br />
2 oz. Shredded 6 Cheese Italian Blend cheeses<br />
1 tsp Cooking Sherry (optional)<br />
1/4 cup heavy cream<br />
1/4 water or chicken broth<br />
2 dashes nutmeg<br />
1 dash of ground mustard<br />

Directions:<br />
Melt your butter in a small pan. Add heavy cream, water and spices. Melt in the cheeses. Add the Sherry last.<br />

Zucchini Zoodles<br />
Add 1 oz oil of choice to a frying pan on medium heat. (I used coconut oil)<br />
Zoodle your zucchini in a frying pan. Toss zucchini for a few minutes. It doesn't usually take too long.<br />

Need a zoodler? I got mine on Amazon back in the day. Looks like this. I think they call them <a href="https://amzn.to/2oXa5AO" target="_blank">Vegettis</a> at the big box stores.<br />
