I have made zucchini fries with egg wash and a low-carb "breading mix." The mix pretty much consists of ground flax, ground chia, and protein isolates. I added parmesan to it. They got pretty crunchy and were quite satisfying as a fry alternative. I haven't ever tried salt for leaching out the moisture, that would be an interesting experiment.
